DON TONY IS DON PEPE’S SON AND THE CURRENT MANAGER OF THE ESTATE. HE IS THE FOURTH GENERATION OF COFFEE FARMERS IN HIS FAMILY AND HIS COFFEES ARE TRULY BEAUTIFUL. Don Tony is supremely conscious of the needs of his plants. He believes a healthy and well fed plant is its own best defence against disease. He is also meticulous about the processing of his cherries – whether it is through his coowned wet mill or on the African beds. All the coffees are processed, organized and gauged in a manner which draws on his wealth of experience. The honey processed bourbon is no different. The skin is removed and the cherries are then laid out (with the mucilage intact) on African beds just a few meters away. Depending on the weather conditions, the coffees might stay on the beds or be moved into the dryers – in which case, Don Tony implements a drying cycle which models day and night. He turns the dryer on for 12 hours and then off again for 12 hours and repeats the cycle until the coffees reach the appropriate moisture percentage. Once dry, this coffee has an incredible aroma of sweetness and truly creates a sensory memory worth anticipating.
