DON PEPE

(TYPICA), PANAMA TO SOME, THE DON PEPE ESTATE MAY NEED NO INTRODUCTION. THE FARMS WHICH MAKE UP THE DON PEPE ESTATE ARE SOME OF THE MOST ACCLAIMED IN THE WORLD AND THIS PRAISE IS RICHLY DESERVED. DON TONY IS DON PEPE’S SON AND THE CURRENT MANAGER OF THE ESTATE. HE IS THE FOURTH GENERATION OF COFFEE FARMERS IN HIS FAMILY AND HIS COFFEES ARE TRULY BEAUTIFUL. Don Tony is supremely conscious of the needs of his plants. He believes a healthy and well fed plant is its own best defence against disease. He is also meticulous about the processing of his cherries – he co-owns his wet mill, fittingly named “Boquete’s Finest”. All the coffees are processed, organised and gauged in a manner which draws on his wealth of experience. His fully washed Typica is a superb example of this. After its washed processing, the coffee is laid out on the patio just a few meters away. Depending on the weather conditions, the coffees might stay on the beds or be moved into the dryers. In this case, Don Tony implements a drying cycle mimicking day and night. He turns the dryer on for 12 hours and then off again for 12 hours, and repeats the cycle until the coffees reach the appropriate moisture percentage. Once dry, this coffee has an incredible aroma of sweetness and creates a sensory memory truly worth anticipating.

TASTING NOTES Brown sugar aroma, stone fruit and white grape flavours, juicy acidity, round body, with a clean finish.
