WINEMAKER’S COMMENTS The Victorian Pyrenees region is renowned for producing Cabernet Sauvignon displaying complexity and definitive regional character, especially in years like the ideal 2011 – 2012 growing season, which provided ideal rains early, a cool spring and summer, then a warm dry autumn to finish. Produced from select parcels of low yielding grapes sourced from our estate vineyard, the Blue Pyrenees Cabernet Sauvignon 2012 was fermentedto dryness in both two-tonne open fermenters and 15-tonne static fermenters. Subsequently, the wine was matured for 18 months in new to four year old French oak barriques.
COLOUR Bright ruby red.
AROMA Fragrant red berry fruit, regional mint and classy French oak aromas.
FLAVOUR A generous mouthful of ripe dark berries complemented by forest flavours of eucalypt, mint leaves, earth and cedary oak. Medium-bodied with classical Cabernet Sauvignon structure and abundant fine grain tannins, which contribute to an elegant, persistent finish characterised by lingering choc-mint flavours. This wine is unmistakably varietal Cabernet Sauvignon
