FOR OPTIMAL FRESHNESS & TASTE To keep coffee tasting fresh, there are a few things to consider. We recommend that you buy whole beans (5-7days) & grind the beans as needed. Store coffee in an air-tight container (do no keep in fridge). Whole beans keep fresher than previously ground. Once the coffee is ground it begins to oxidize, deteriorating taste quality. Having a quality burr grinder is a good investment. Burr grinder will delivery a more accurate & consistent grind, giving coffee optimal taste and freshness. Experiment to find the correct grind setting. Brewed coffee is 99% water. Using quality water and the correct temperature makes a big difference in maintaining the taste. The optimal temperature is 92C/200F*. If water is not heated to this ideal temperature, the essential oils from coffee will not be extracted properly, resulting in a weak, light & sour cup.
