Basic Bread Roll Recipe Ingredients 450gStrong Plain Flour 7g packet of dried yeast 300ml warm water ½ tsp of salt 25g margarine Milk for glaze Poppy seeds or Sesame seeds
Method 1. Preheat the oven to Gas 6, Electric 180/200C 2. Line a baking tray with baking parchment to prevent rolls sticking. 3. Sieve flour, add salt and dries yeast. Rub in margarine. 4. Warm water to body temperature. 5. Make a well in centre of bowl and pour in warm water and beat with a wooden spoon until a soft dough is formed. 6. Knead on a floured worktop for 10 minutes; until smooth and shiny and elastic. 7. Cut into 8 pieces and shape.
8. Place on greased baking tray and leave to prove on top of the oven for 30 minutes. 9. Glaze with milk. Sprinkle over poppy /sesame seeds. 10. Place near the top of the oven for 10 minutes. 11. To test: Tap the base with your knuckles if they sound hollow they are cooked.
Adaptions to Basic Bread Roll Recipe Pizza -Add a tablespoon of olive oil instead of margarine and add 1 tsp of sugar as well as salt to yeast -After kneading shape into one large thin round or 2 medium rounds. -Spread with pesto sauce or passata. -Cover with favourite pizza toppings. Pizza Catherine wheels -Add a tablespoon of oil instead of margarine and 1 tsp of sugar as well as salt to yeast. -Roll out dough into a rectangle 30cm x 20cm -Spread tomato puree and your favourite toppings. -Roll up like a Swiss Roll -Cut into 8 pieces -Place in a shallow tin to cook, place or closely side by side on a baking tray. -Cook for 20-25 minutes Flavoured bread or rolls -At kneading stage add fruit and nuts to the dough or sundried tomatoes and grated cheese. -Bake for 10 minutes. Pretzels -Add 10ml of brown sugar as well as salt to the yeast. -After kneading divide into 8-12 equal pieces. -Roll each piece into a rope & shape each rope into a figure of eight or S shape -Pour 75ml of warm water into a shallow dish & stir in 15ml of baking powder. -Brush Pretzels with mixture & lay on baking tray. -Sprinkle Pretzels with preferred topping. Use salt, grated parmesan cheese, poppy seeds or sesame seeds for a savoury Pretzel or sugar and cinnamon for a sweet Pretzel. -Bake for 10 minutes in a hot oven then melt some butter over a low heat & brush over Pretzels. Bagels -Add 1 tbsp of caster sugar to yeast as well as salt. -After kneading divide dough into 8-10 pieces and shape into a flattish ball, then take a wooden spoon and use the handle to make a hole in the middle of each ball. -Slip the spoon into the hole, then twirl the bagel around the spoon to make a hole about 3cm wide. -Bring a large pan of water to boil and tip in 3tbsp of caster sugar. -Slip bagels into boiling water- no more than 4 at a time. -Cook for 1-2 minute, turning them over until they have puffed up slightly and a skin had formed. -Remove from water and drain off excess water. -Sprinkle over your choice of topping (poppy seeds, sesame seeds) and place on a baking tray. -Bake for 25 minutes until browned and crisp and bases are hollow when tapped. Mini Focaccia -Add 1tsp of sugar to yeast as well as salt. -Finely cut up 2-3 black olives and knead into dough, -Divide dough into two and pat each piece into an oval shape on a baking tray. -Make dents all over each oval with your fingers. -Cut up 3 sun dried tomatoes and 2-3 stems of fresh rosemary with scissors and press into holes. -Sprinkle some sea salt over top and pour over some olive oil (4tbsp) -Bake in oven for 15 minutes. Cheesy Bread with Rosemary. -Add 1tsp of dried Rosemary and 50g of grated cheese before adding the warm water. -Knead and shape into 8 buns. -Brush with egg before baking in oven for 10-15 minutes.
