Preparation BEEF SHORT RIB-BRAISING FORMULA
Preheat oven to 350 degrees.
1. Dust the beef short ribs with seasoned flour and brown on all sides in oil in a braiser. Remove the short ribs from the oil. Add the onion, celery and carrots. Saute until fragrant. Add tomato paste and brown the tomato paste in vegetables.
2. Return the meat to the braiser, add 2 qts. of broth and braise in the oven for 2 hrs or until meat is fork tender. Remove meat from bones and dice. Strain the braising liquid, return the cubed short rib meat to the braising liquid and reserve warm.
PAPA'S PARSLEY DUMPLINGS
1) In a small saucepan, heat the milk and butter to a boil.
3) Mix the milk/butter mixture into the dry ingredients.Mixture will be stiff.let cool slightly. Form into dumplings.
4) Cook the dumplings in salted water. Reserve warm.
SOUP FOUNDATION
1. In a stock pot, saute the onions, celery and carrots in butter until tender. Add the remaining beef broth, braising liquid and short rib meat. Simmer for 30 minutes to marry flavors. Add dumplings and simmer for 10 minutes to warm through. Taste and adjust seasoning.
