Colorful Potato Salad Courtesy of Beagle Hill Farm Ingredients           

3 red potatoes 3 white potatoes 3 Yukon Gold potatoes 3 blue potatoes ½ cup sugar ½ cup diced celery 1 teaspoon yellow mustard 1 teaspoon vinegar 1 cup mayonnaise ½ cup sour cream Salt and pepper to taste

Directions Use medium-sized potatoes, approximately 2 ½ pounds. Wash the potatoes and dice into bitesized pieces (leave the peels on red and blue). In a large pot, add potatoes to salted water. Bring to a boil and cook until fork tender. Drain and cool. Mix sugar, diced celery, yellow mustard, vinegar, mayonnaise, and sour cream. Add salt and pepper to taste. Pour over potatoes and mix thoroughly. Cover and chill in the refrigerator until serving.
