Dark Chocolate Avocado Truffles





Ingredients • 3oz or 100g 70% dark chocolate • ¼ cup ripe avocado, mashed into a paste (about ½ small avocado) • ½ tsp vanilla extract • Pinch of salt • Optional: Cocoa powder or desiccated coconut (for rolling)

Making it 1. Break the chocolate into smaller chunks and place along with the vanilla extract and salt in a heat proof bowl. Place the bowl over a pot of simmering water on the stove top. Melt until completely smooth. If the chocolate isn’t melting, increase the heat. 2. Whilst the chocolate is melting, mash the avocado with a fork or potato masher until no lumps are visible. 3. Remove the chocolate mixture from the heat and add the mashed avocado. Stir into the melted chocolate mixture until smooth and thickened. Don’t worry if the mixture appears lightly lumpy, this is normal, but make sure no lumps of avocado are visible. 4. Place in the fridge to set for 20 minutes, or until slightly firm to the touch. 5. Once the mixture has been chilled and is slightly firm, use a tablespoon to scoop the chocolate. Roll the mixture into 8 - 10 small balls using your hands. 6. Roll each ball in cocoa or coconut to coat. Store in the fridge until served.

TIPS & HINTS If the truffles seem quite oily after chilling, roll out on paper towel as you form the truffles.
