½ cup quinoa cooked ½ cup Kale raw ½ cup red or green cabbage shredded

Grilled Vegetables: ½ cup butternut squash cubed, roasted 1 beet sliced 4 baby carrots tops on ½ small red onion sliced 2 radishes sliced herbs and spices: rosemary, thyme, and sea salt

FOR THE SAUCE (makes about 2 servings) ½ cup tahini paste juice of 1 lemon ½ cup Plain Greek Yogurt METHOD 1. 2. 3. 4. 5. 6.

Turn grill to medium heat. Wash, peel and prep Vegetables. Grill vegetables until slightly charred and fork tender. Combine all sauce ingredients in a mixing bowl and incorporate with whisk. In a bowl, combine raw Kale and shredded cabbage, quinoa and roasted veggies. Top with desired amount of sauce. Serve.
