LIKE MANY OF BOQUETE’S FARMS, LERIDA ESTATE HAS QUITE THE HISTORY. IT WAS ESTABLISHED IN THE EARLY 1900’S BY THE NORWEGIAN PANAMA CANAL ENGINEER TOLLEF MONNICHE. Mr. Monniche is credited for first exporting Panamanian coffee to the country of Germany, which by and large helped to create the quality name of Panamanian coffee in Europe. Today the farm houses various lodging, a restaurant, and cafe. The Chairi family now own and run the estate. Lerida Estate is situated at approximately 1700 masl on the foothills of the Baru Volcano. This provides the estate with its deep volcanic soil and premium, mountain growing conditions. Ample rainfall, combined with a sunny and dry harvesting season, provide ideal conditions for specialty coffee production. During the harvesting season, only the ripe cherries are selected and picked daily. The coffee then undergoes a meticulous wet process in Finca Lerida’s original and unique processing plant — designed by Mr. Monniche himself. In keeping with the farms traditions, wet-processed coffees are sun dried and then stored in aged wooden silos until the coffee is ready to be used. For organisational purposes and complete traceability the entire farm is sectioned off into lots. Lot 10, year after year, is our favorite and it just so happens to be the highest on the farm. This year we specifically asked for it to be processed in the honey format for just that touch of added sweetness.
