The short ribs are perfectly cooked and flavored, that each bite reveals the flavors of dried chili peppers, tomato paste and all the spices in it. You should know that the Mexican cuisine is both complex, because of influences by other regions, and colorful, because of the traditional ingredients they put into most dishes. While most of us (and most countries) use avocados, mangoes and oranges as sweet dessert and juices, Mexico uses them in savory dishes. Most dishes have quite distinct taste and texture from the traditional Khmer cuisine. But they aren’t weird, swear. You can start with the Avocado & Orange Salad. It is a mix of, well, fresh thin slices of avocado and oranges that’s partially soaked in lime juice. It comes strong at first bite as citric acid tends to dominate over avocado.
