John Michelotti resides in Big Indian, NY on a family farm where he cultivates indoor and outdoor mushrooms for their healthful components, and uses them to create Health Extractions which he sells online, in stores and at farmers markets. He owns Catskill Fungi, which empowers people through fungi via outdoor guided classes, cultivation courses, educational talks, private consultations, mushroom art, and mushroom health extractions.

Erik Schellenberg works for Cornell Cooperative Extension of Orange County and the Eastern NY Commercial Horticultural Program. He‘s been growing mushrooms as a hobby since 2006 and foraging for mushrooms since he was young. Erik has been learning about and helping to spread the use of fungi in sustainable forestry management, gardening and tree planting, mycoremediation, and human health. He is interested in helping local growers expand and diversify their farms to include mushroom products for the health benefit of consumers, economic benefit to farms, and ecological benefit to the land.

John is President of the Mid-Hudson Mycological Association (MHMA) and a member of Connecticut Westchester Mycological (COMA), Pioneer Valley Mycological Association (PVMA), and North American Mycological Association (NAMA) as well as Amazon Mycorenewal Project researching the use of fungi to remediate oil spills in the Amazon Rainforest. He‘s a member of the Mushroom Advisory Panel for Certified Naturally Grown, who are developing standards for best practices in ecological mushroom production.

Workshop Summary New York was once a hotbed for mushroom cultivation, and the past few years have seen a resurgence of interest in this ancient art. As the local and health food movements evolve, the niche for sustainably produced healthy New York mushrooms has been steadily growing.

SPECIALTY MUSHROOM CULTIVATION History and economics of mushroom cultivation, plus hands-on log inoculation

The workshop will begin with an hour-long talk covering the history, economics, and production systems of specialty mushroom cultivation with a focus on logbased production of shiitake. The remainder of the workshop will consist of a hands-on mushroom log inoculation and an in-depth explanation of the process. A light lunch is included. Who Should Attend? Farmers who are looking to add variety to their farmstand or direct retail offerings will be interested in growing a crop of shiitake because most of the work occurs in the off-season and can easily be fit into firewood harvesting or other winter forest activities. Homeowners will love the fresh mushrooms bursting with flavor and packed with nutrients as well as the wonderful garden compost that can be made from spent logs.
