Our holiday plans
Eleanor Coppola shares the family’s holiday plans for 2009
L
ast year our family spent Christmas together in Belize at our resort, Turtle Inn. It was warm, tropical and fun, but didn’t feel quite like a proper holiday. This year we will be at home in the Napa Valley and we’re especially looking forward to seeing our granddaughter Romy (Sofia’s daughter), who will be three years old and is very excited for the holiday! We will have an Italian-style Christmas Eve with a seafood dinner. Francis usually makes tomato sauce with octopus and serves it over rigatoni pasta which we enjoy with one of our Zinfandels. I prepare a romaine salad and our son Roman makes a terrific Caesar dressing. Sofia is planning to bake Christmas cookies with Romy. Our twenty-two year-old granddaughter Gia and I will make rum balls. On the 25th we get up early and bring cappuccino to the front parlor of the old Victorian house. We sip our coffee and open presents from under a fragrant Christmas tree cut from our hill. In the afternoon we cook a traditional dinner together in the big country kitchen. Each of us has our specialty. I make stuffing for the turkey seasoned with fresh herbs from the garden. (There is an overabundance of wild turkeys on our property this year and we hope to have one for dinner.) Roman makes pumpkin pies from scratch, starting by roasting wedges of pumpkin and toasting the seeds for a snack. Sofia creates a delicious baked apple and yam dish. Gia and her mother, Jacqui, make fresh cranberry sauce. We prepare wild mustard greens gathered from the vineyard and cook wild rice. Family and friends pitch in chopping and slicing. Francis and Roman make frequent trips to the wine cellar for more bottles to keep the cooks’ wine glasses full. Finally, the food is brought to the dining room where Francis carves the turkey and we all sit down to a joyful feast. On behalf of the Coppola family and everyone here at Francis Ford Coppola Winery we wish you a joyous Holiday Season and prosperous New Year.
RENOVATION UPDATE Moving Ahead
RENOVATION UPDATE This fall we’ve been making significant steps with the renovation. The first thing you’ll notice after driving under our new Francis Ford Coppola Winery sign is the gleaming copper roof on the East Tower, which will soon patina. Multiple facets of the property are really starting to take shape. The pool is in place, and the retaining walls surrounding the bandshell and the four regulation size bocce courts are also underway. By the time of the next newsletter in March, we’ll be working on the finishing touches in preparation for our grand unveiling next summer. Stay tuned First Members! Your membership is about to get even better!

LESLIE PINEDA Chef at Mammarella’s Walk into Mammarella’s, even during the bustling lunchtime rush, and you’ll be greeted not only by the intoxicating smell of fresh baked pizza but also by a warm, smiling face. I would bet my lunch on it. * The high energy and upbeat atmosphere that is ever-present at our Napa cafe has been a welcome addition to the area and is no doubt a reflection of its Head Chef, Leslie Pineda. The always-cheerful chef, who first began working for Francis Ford Coppola Presents in 2007 at Cafe Rosso & Bianco in Palo Alto (which closed in July 2008), sat down with us recently to chat about her new role.
Leslie on getting in the Restaurant Biz: “I never thought that I would become a chef. As a kid, I actually wanted to be a dentist. I always enjoyed cooking though, and grew up helping my dad in the kitchen a lot. From my dad’s suggestion I enrolled in the California Culinary Academy of San Francisco after high school and fell in love with it immediately.”
On her “Culinary Adventure” through Europe: “After Cafe Rosso & Bianco closed, I went on what I called a ‘culinary adventure’ to a ol p seven different European countries. I wanted to expand my palate by experiencp oCo nnin Pe a l i ing new tastes and flavors to help with my cooking. I basically ate my way Ita , Y through Europe (laughs). When I got back I was called into this role and TY IT LI ICRE have immediately been able to put what I learned to work. When Francis A T U N SU talks food he always talks about authenticity and doing things the way they do E A Q T HL E them in Italy. It’s one thing to hear about this secondhand, but to be able to visually U A & P & see it and experience it has given me great perspective.” On the (not so) secrets of pairing food and wine: “In my opinion, the notes you see on wine labels (regarding food pairings)… those are just guidelines. It’s all based on your individual palate. It’s so dependent on your own tastes – there really are no rules. There is no need to over think it. Taste some of the wine, smell it, and then imagine what you can see yourself eating with that wine…. and then that’s what you eat.” On Mammarella’s watchwords ‘Quality, Authenticity and Pleasure:’ “The thing I love the most (about working at Mammarella’s) is that it’s unadulterated. I really like working with Francis, and his philosophy. He takes people for face value and does not like phony. For him, it all has to be real. These rules apply with the food we cook. Sometimes less is more. CHANTRELLE RISOTTO WITH PANCETTA & QUAIL EGG
Yield = 4 servings Risotto: 2 Tbls Extra Virgin Olive Oil 1 Tbls butter 1 Large yellow onion (minced) 2 Cups Arborio Rice 5 Cups stock (mushroom/vegetable)
Mushroom Mix: 1 Tbls Extra Virgin Olive Oil 1 Tbls Butter 1 Tbls garlic (minced) 2 Cups Diamond Chardonnay ½ Lb Chantrelle Mushrooms

Mammarella Pasta and Sauces Premium organic pasta and sauces that pay homage to Italia, who wanted her grandkids to call her “Mammarella” (little mama), rather than “grandma,” a name that implied she was old. Beautiful at every age, she was the family’s gracious provider of care, comfort and delicious food.
½ Cup Pancetta 1 Cup Grated Parmesan Cheese 4 Quail Eggs 1 Bunch Chives (to garnish)
For risotto heat oil and butter in a pan and sweat onions. Add Arborio rice and toast until it smells “nutty.” Add 1 cup of chardonnay and stir until absorbed. With a 4 oz ladle, gradually add hot stock and stir until all liquids are absorbed, continue to do so until all liquid is used or rice is fully cooked (al dente). For the mushroom mix, sauté olive oil, butter, minced garlic, and mushrooms until soft. Deglaze with remaining wine, reduce and season with salt and pepper to taste. Fry pancetta and render fat. Mix “mushroom mix,” risotto, grated parmesan, and pancetta. Garnish with chives and top with fried quail eggs.
