1 fresh Serrano pepper, stem removed, halved and seeds removed ½ sweet onion, coarsely chopped 1 garlic clove, peeled 1 tomatillo, husked and halved 1 avocado, peeled and cut into chunks 1 Tbsp. fresh lime juice 1/3 cup fresh cilantro leaves, chopped ½ tsp sea salt ¼ cup water
Directions 1. In a large, oil free frying pan over medium heat, pan-roast the Serrano pepper, onion, garlic and tomatillo on all sides for approximately 20-25 minutes. 2. Add all ingredients in a blender or food processer, whirl until blended and chunky.
Tips Best enjoyed when chilled before serving. Serve with your favorite veggies such as carrots, cucumbers, green onions, raw asparagus, zucchini, etc. or your favorite stone ground corn tortilla chips. Also great addition to any salad, eggs, tacos, etc.
