Slow Cooker Meatless Chili INGREDIENTS: □ 1 10-oz package Eat Smart Cauliflower Florets □ 1 12-oz package Eat Smart Broccoli Slaw □ 2 tablespoons olive oil □ 2 onions, chopped □ 5 cloves garlic, minced □ 1 green bell pepper, seeded and chopped □ 2 red bell peppers, seeded and chopped □ 2 (15 ounce) cans crushed tomatoes □ 4 (15.5 ounce) cans black beans, drained □ 2 teaspoons salt □ 1/2 teaspoon ground black pepper □ 2 teaspoons ground cumin □ 6 tablespoons chili powder □ 2 tablespoons dried oregano □ 2 tablespoons distilled white wine vinegar □ 1 tablespoon liquid hot pepper sauce

DIRECTIONS:
Heat the olive oil in a large skillet over medium-high heat. Add the onions; cook and stir until onion is lightly browned and tender. Add garlic and stir for 30 seconds. Transfer onion and garlic to slow cooker or thick walled pot with lid. Chop the cauliflower florets coarse and add to slow cooker. Add entire content of broccoli slaw mix. Add peppers and tomatoes. Rinse the black beans with a strainer, add to the slow cooker and set to Low. Add all remaining seasonings, stir gently and cover. Cook on LOW for 8 hours.
