Proposal Summary TCM Variety is pleased to present The Ministry of Culture, Sport and Youth with this proposal for the provision of affordable and nutritional food services for the 2014 National Summer Camp Programme. The Summer Camp areas we are most interested in are in St Michael, St Thomas and Christ Church. Our goal is the daily provision of budget friendly and appetizing hot/cold meals services, that are closely aligned with the vision your ministry had at the inception of this programme. We recognize this unique opportunity to serve the children of Barbados a balanced local menu that is not only very appealing but encompasses all dietary considerations. Having duly examined your requirements, we are confident that our proposed service will effectively address your needs. Our overall goal will be to provide the lunch services in a way that not only is affordable and attainable to all kids at the camps but ensures that the Ministry's vision for the Summer Camp Programme is not compromised. Our approach to the canteen/ cafeteria food and menu concerns will be to offer semi-personalised breakfast, lunch and snack choices consisting of staples such as; fresh-baked local goods, meat, fish or vegetarian choices, an always present vegetable and fruit option, a wide range of snacks and a selection of hot and cold beverages. One consistent theme will be to use fresh and local ingredients, fruits, vegetables, herbs and spices. By choosing TCM Variety, The Ministry of Culture, Sport and Youth will also receive: 

A properly managed cafeteria/canteen service that provides exceptional food in exciting

variety, superior customer service and clean production and service areas that exceeds HAACP requirements, the Health Services (Food Hygiene) Regulations 1969 and the Health Services (Restaurants) Regulations 1969; 

Freshly prepared and presented hot and cold meals choices (that can be specific to dietary

requirements if ordered in advanced). These hot and cold meals will all include the vital food groups essential to children's growth and development. Please see attached sample menu for further illustration. 

Profile TCM Variety is a new service business founded by Leslie Wakefield in 2013. Other key members of the team include Alinda Mason, Tiffany Dottin, Marcia Branch and Natasha Branch, who collectively have significant customer service, management, manufacturing, cooking (including School Meals Department) and catering experiences. This combined over twenty (20) years of experience solidifies our ability to satisfy and surpass the needs of our customers.

A Solution to your Needs NEEDS IDENTIFICATION: Requirements TCM Variety understands the National Summer Camp 2014 Programme requirements to be as such: General Requirements: Provision of an average of 120 hot/cold meals among an approximate 200 camp attendees; Technical Requirements: To offer all equipment necessary for adequate canteen/cafeteria management needs and service delivery. Health and Safety Requirements: To provide a canteen/cafeteria operation at a standard in keeping or beyond the HAACP requirements, the Health Services (Food Hygiene) Regulations 1969 and the Health Services (Restaurants) Regulations 1969. Cost Requirements: Investment and Fees: Rental Costs and or any other fees inclusive of Utilities and dependent on whether the full use of the location is given. To be discussed and agreed upon initial meeting.

Proposed Services (Menu and Service Programs) Menu Summary: BREAKFAST CHOICES of hot local delicacies and favourites, sandwiches (cutters), pastries and a variety of hot beverages will be offered as early as 8:00 a.m. ALL DAY SNACKS & GOODIES will carry popular ‘side –orders’ of traditional healthy snack items consisting of fruits, salads, pies, cutters, fries, pastries and desserts. LUNCH customers can choose from a selection of meats, carbohydrates, vegetable and salad options for a well balanced diet. BEVERAGES that range from hot chocolate, teas, coffees to soft drinks, homemade, local and natural juices will be offered to complement the menu.

PRICES:

The average cost will be $5 per snack meal and approximately $10.75 per full plate lunch.

This lunch combo includes one starch, one protein and one vegetable option. The prices may be adjusted based on further research.
