Vanilla Salt Curried Carrot Soup Serves 4 Prep time: 10 minutes Cook time: 20 minutes Carrots are high in natural sugar, and a touch of vanilla salt brings out the sweetness and compliments this creamy and spicy soup nicely. Try this technique with any sweet vegetable; sweet potatoes, winter squash, or tomatoes are a good start. Ingredients: 2 tablespoons coconut oil 1 onion, diced 1 tablespoon grated ginger 1 tablespoon curry powder 2 bunches carrots, peeled and chopped 1/2 teaspoon sea salt 5 cups vegetable stock 1 can coconut milk Vanilla sea salt and fresh herbs, for garnish Directions: Heat the coconut oil in a large saucepan or Dutch oven. Add the onions and cook until soft. Add the ginger and curry powder and continue cooking for 1 minute. Add the carrots, salt, and vegetable stock and bring to a boil. Reduce heat and simmer for 15-20 minutes, until carrots are tender. Transfer the soup to a blender and puree until smooth. Add back to the pot and stir in the coconut milk. Simmer until just heated through. Ladle the soup into bowls and sprinkle with the vanilla salt and fresh chopped herbs.

Ingredients: 1 teaspoon Vanilla sea salt 1 teaspoon granulated sugar 2 ounces vodka 1/2 ounce apricot brandy 1/2 ounce Grand Marnier Fresh squeezed orange juice Orange slices Directions: Put the vanilla salt and sugar on a small plate or in a shallow bowl and mix with your fingers. Dip two glasses in water (or orange juice) and then the salt mix until the rim is well coated. Add ice to your glasses Put the vodka, brandy, and Grand Marnier in a cocktail shaker. Shake until well mixed and divide between 2 glasses. Top off each drink with the orange juice and an orange slice before serving.
