Chef Jasper’s Chicken & Eggplant Casserole Dish

INGREDIENTS: 1 eggplant sliced into 3/8 inch rounds 2 Campo Lindo chicken breasts cut in half and pounded thin 2 cups Italian breadcrumbs 1 cup flour for dusting 8 slices fresh Mozzarella cheese 1/2 cup Parmesan cheese 28 oz. Jasper’s Italian Pasta Sauce or your favorite red sauce 1 cup or more olive oil for frying
INSTRUCTIONS: Preheat oven to 375° Arrange eggplant rounds on a baking sheet. Spray with food release. Bake 15 to 20 minutes. Pat dry with a paper towel and set aside. Whisk eggs. Pound chicken breasts and dip in flour, egg wash and then Italian breadcrumbs. Place in hot frying pan with olive oil and salt until crispy. In a large casserole dish, add pasta sauce and layer with chicken Parmesan followed by eggplant followed by mozzarella and more sauce. Dust with Parmesan cheese and bake in oven for 20 minutes. Serve with a side of pasta and Jasper’s sauce.

Like many youngsters growing up in the Missouri Bootheel, Bill Bader worked on peach farms each summer, picking, grading, packing, whatever was needed. In 1986 he set out on his own and bought a 150-acre peach farm near Campbell, Missouri.
