INGREDIENTS: 1 lb. Western Buffalo Bison 2 T. olive oil 1 Dutch County Eggplant, diced 2 ears Andy’s Candy Corn, shucked 1 yellow onion 2 sprigs green onions, minced 28 oz. whole tomatoes One 16 oz. can white or red Kidney Beans Cumin to taste 2-3 green chilies (optional) 1 package Williams Chili Seasoning 2 fresh garlic cloves (thinly sliced) 1 Jalapeno Salt to taste

INSTRUCTIONS: Chop onion. Add oil to a 3 qt. pot and place on medium high heat. Brown meat and eggplant with onion. Eggplant should be soft. Drain any grease. Cut kernels away from cobs. Set aside. Crush and add whole tomatoes, sliced garlic, jalapeño and green chiles (optional) to pot. Simmer 10 minutes. Add William’s Chili seasoning & cumin. Season with salt. Bring all to a boil and then simmer for 30 minutes. Add kidney beans, green onions and corn. Let chili simmer about 5-10 minutes before serving.

FARM UPDATE DOWN ON THE FARM! The season is starting to slow down, with Athena Melon harvest complete. Produce will start changing to primarily fall crops like fall squash, yellow squash, zucchini, and fall cucumbers.
