REC I P E OF T HE WEEK
Chef Jasper’s BBQ CHICKEN, APPLE & MOZZARELLA QUESADILLA INGREDIENTS: 4 Flour tortillas 1/4 cup Gates & Sons BBQ Sauce 1 cup cooked chicken, shredded or chopped 1/2 lb Hennings Wisconsin Mozzarella Whips 1 apple, sliced
INSTRUCTIONS: In a large mixing bowl, mix cooked chicken with BBQ sauce. Set aside. Heat a large skillet on medium high heat. Place one tortilla in the skillet. Flip it. Place cheese whips on half of the tortilla. Add chicken and sliced apple pieces on top of the cheese. Fold the tortilla over like an omelette, and press down on the folded tortilla with the spatula. When the cheese inside the quesadilla has melted, remove the quesadilla to a cutting board and cut into 3 triangles, as if you were cutting a pie. Repeat with remaining tortillas, cheese, apples and chicken. Serve warm.
