EMMA MOFFATT’S: Carrot and Coconut Balls Handy snack for when ‘on-the-go’ Natural energy source / made with whole foods (rather than a processed muesli bar etc.) Source of fibre PREP TIME: 10 minutes COOK TIME: 0 minutes SERVES: 10 persons (makes 30 balls) INGREDIENTS: 1 large carrot grated; 1/2 cup almonds; 1/4 cup walnuts; 1/4 cup shredded coconut; 5 fresh dates or figs; 1 Tbsp chia seeds; 1/2 tsp cinnamon.
