EMMA MOFFATT’S: Carrot and Coconut Balls  Handy snack for when ‘on-the-go’  Natural energy source / made with whole foods (rather than a processed muesli bar etc.)  Source of fibre PREP TIME: 10 minutes COOK TIME: 0 minutes SERVES: 10 persons (makes 30 balls) INGREDIENTS:  1 large carrot grated;  1/2 cup almonds;  1/4 cup walnuts;  1/4 cup shredded coconut;  5 fresh dates or figs;  1 Tbsp chia seeds;  1/2 tsp cinnamon. METHOD: 1. Mix all ingredients in a food processor until combined; 2. Roll into balls and sprinkle with shredded coconut; 3. Refrigerate
