We like your confidence! So what’s your signature dish? I do a great beef Wellington. Food aside, do you have a favourite tipple? I like neat vodka if I’m going out to a party. I get my dancing shoes on and I’m the happiest girl in the world. What would you choose to eat for your last supper? Seafood. I’d have barbecued fresh fish – and ideally I would catch it myself first. Who would be your dream celebrity dinner date, past or present? Elvis Presley. He is the most beautiful man that’s ever lived. His life was so tragic.

Grilled lamb rump with rosemary cauliflower mash
SERVES 2
This dish is bursting with flavour thanks to the herb-infused mash… Ingredients 2 lamb rumps (about 250g each) 1 tsp dried rosemary 1 tbsp coconut oil or butter Olive oil, to serve Chilli flakes, to serve Salt and freshly ground black pepper, to taste

Method n Trim off any excess fat on the lamb and score the top with a sharp knife. Season with salt and pepper and sprinkle over the rosemary. n Heat a pan with the oil or butter and cook the lamb fat side down for 4 minutes, turning it over every minute until browned. Pop it in the oven for 15 minutes then leave it to rest for 5 minutes. n To make the cauliflower mash, cook the cauliflower in a pan of boiling water for 7-10 minutes, until To make the it is cooked through. Drain. cauliflower n Meanwhile, heat the oil or butter in a mash frying pan and throw in the onion. Sauté 1 cauliflower, for 3 minutes then throw in the garlic, a roughly chopped pinch of salt and the rosemary. Cook 1 tbsp coconut for another 3 minutes then leave to oil or butter cool slightly. Mash the onion mix with 1 onion, finely the cauliflower, scraping out all the chopped spices and oil from the pan. 2 garlic cloves, n Serve the mash and lamb together crushed with a drizzle of olive oil, a pinch of 1 tbsp dried rosemary chilli flakes and salt and pepper.
