2 Tbsp garlic! 1 cup yellow onions, medium diced! 2 Tbsp olive oil! 2 heads cauliflower, remove stems and discard! 3 russet potatoes peeled, and sliced ½ inch thick! 1 Tbsp tarragon, finely minced! 1 Tbsp thyme, finely minced! 1/2 cup white wine! 1/2 tsp salt! 1/2 tsp pepper! 3 bay leaves! 2 Tbsp butter! 1/2 cup cream!

1. In a large saucepan, sauté the garlic and onions in the olive oil over medium heat until the onions turn translucent. Do not brown the veg.! 2. While the onions are sweating, boil the potatoes and cauliflower in salted water until the potatoes are soft.! 3. Drain the potatoes well.! 4. When the onions are translucent, add the white wine, tarragon, thyme, salt, pepper, bay leaf, butter and cream.! 5. Simmer this mixture for 10 minutes to combine the flavors.! 6. After 10 minutes, remove the bay leaf and discard.! 7. Add the cauliflower and potato to the mixture.! 8. Blend well until very smooth using a stick blender or beverage blender. This should be a thick puree, almost like mashed potatoes.! 9. Season to taste with salt and pepper.
