Honey Peach Turkey Tacos with Ginger Flavored Brown Rice and Creamy Goat Cheese
DIRECTIONS:
1. Begin by draining the peach juice from can into a bowl. Mix with garlic, honey, and pinch of salt and pepper 2. Add peach mixture to ground turkey. Let marinade sit for 10 minutes 3. In the meantime, heat spiral burner to medium heat (if you do not have this, you can use a Panini press instead). 4. Place whole wheat tortilla on burner for 2-3 minutes and remove once grill marks are achieved. Set tortillas aside 5. Dice ½ cup peaches and side aside 6. Heat medium sized pan to medium heat and add cooking spray 7. Add turkey to pan and heat until cooked all the way through 8. Heat brown rice in microwave following package directions 9. Add ginger to ½ cup brown rice and mix well 10. Assemble taco by adding arugula, red cabbage, pork, rice, goat cheese, and peaches.
