Hummus and Tuna Salad APPROXIMATELY 20 SERVINGS

6 ounces canned white albacore tuna, drained ¾ cup hummus 1 cup finely shredded fresh organic spinach leaves 1 cup grated carrots 1 large organic hard-boiled egg white (diced) 1 tsp. ground cumin

1. Place all ingredients in a mixing bowl and mix thoroughly.

Serve over Ezekiel style break or another low glycemic style bread or over a bed of romaine lettuce.
