Panzanella The bread in this dish soaks up the dressing for a delicious treat. Enjoy! Elizabeth

Ingredients! 3 T good olive oil! 1 small French bread or boule, cut into 1 inch cubes (6 cups)! 1 tsp kosher salt! 2 large, ripe tomatoes, cut in to 1 in cubes! 1 cucumber unpeeled, seeded and sliced into 1/2 inch cubes! 1 bell pepper seeded and cut into 1 inch cubes! 1/2 cup red onion, cut in half and thinly sliced! 1 or 2 avocados cut into 1/2 inch cubes! 20 large basil leaves, coarsely chopped! 1/4 - 1/2 cup mint leaves! Debutante Farmer Salad Dressing or other vinaigrette

Directions! Heat the oil in a large sauté pan. Add the bread and salt; cook on medium heat, tossing frequently for about 10 minutes or until browned. Add more oil as needed.!

In a large bowl, mix the tomatoes, cucumber, bell pepper, red onion, mint and basil. Add the bread cubes and toss with Debutante Farmer Salad dressing or other vinaigrette. !

Season with salt and pepper. Serve immediately, or it is also good after sitting for an hour or so for the flavors to blend. !
