Recipe for a Crowd – Make day before party recipe!
Parmesan-Basil Veggies 2 2/3 cups plain low fat plain yogurt (Greek style has most protein) 1 1/3 cups grated low fat Parmesan cheese 1/2 cup white vinegar 1/4 cup fresh basil or 4 tsp dried basil leaves 4 garlic cloves finely chopped 8 cups broccoli (bite size pieces of flowerets and stems) 6 cups cauliflower (bite size pieces of flowerets) 4 medium zucchini cut into cubes 4 medium carrots thinly sliced 2 medium onions thinly sliced and separated into rings Serves: 24 (about 3/4 cup servings) Mix yogurt, cheese, vinegar, basil and garlic in large glass or plastic bowl. Add remaining ingredients; toss. Cover and refrigerate at least 4 hours to blend flavors. (This is a great "make the day before the party" recipe.)
