Pumpkin Chicken Pie 1 pumpkin 2 tsp curry powder 2 chicken breasts 1 tbsp olive oil 1 tsp ginger 2 tsp garlic

2 potatoes 1 cup milk ½ cup chicken stock 1 egg parmesan cheese

Dice pumpkin. Lay in casserole dish and coat in 1 tsp curry powder. Dice chicken and fry in oil for 2 mins with ginger and garlic. Lay chicken over pumpkin. Peel and finely slice potato. Lay over chicken. To make sauce: add cornflour to milk and chicken stock. Simmer slowly, stirring constantly until sauce thickens. Remove from heat. Stir through 1 tsp curry powder and lightly whisked egg. Pour sauce over chicken and vegetables and top with grated parmesan. Bake 50 mins 180°C then grill top for 10 mins until crisp.
