Roasted Brussel Sprouts  with Almond Slivers SERVES 3-4

INGREDIENTS

1 lb Brussel sprouts, sliced lengthwise in half 3 Tbsp extra virgin olive oil or coconut oil ¼ tsp sea salt 2 Tbsp fresh lemon juice 2 Tbsp slivered almonds, toasted (optional)

1.  Preheat oven to 400 degrees; cover a baking sheet with  parchment paper, set aside. 2.  Add olive oil to a large skillet over medium-high heat.  Place Brussel sprouts in pan, cut-side down, sauté until lightly browned. 3.  Remove Brussels sprouts from skillet, spread on baking sheet. 4.  Sprinkle with salt and place in oven to roast for 12-15 minutes. 5.  Remove from oven, add to a serving bowl.  Toss with fresh lemon juice and slivered almonds.  Serve hot.

To toast slivered onions, place almonds in a dry skillet over medium heat.  Turn almonds frequently until lightly browned.  Remove from heat and cool. Double or triple recipe quantities for larger serving size. For an added kick, sprinkle Brussel sprouts with cayenne pepper in step #3 before roasting..
