Roasted Coastal Mussels INGREDIENTS:

2kg mussels, cleaned 200g spicy sausage meat (fresh chorizo) ½ cup oregano leaves 1 cup parsley leaves ½ cup garlic chives, 4cm lengths 375ml Hop Thief American Pale Ale 150ml extra virgin olive oil Grilled bread 2 young garlic heads, crushed

METHOD:

 dd 50mls of the olive oil to a large A pot and fry off the spicy sausage. Break up the sausage and brown until fragrant.  n a high heat add the mussels to O the pot along with the beer and garlic chives. Cover with a lid and drop the heat to medium. The mussels are ready once the majority have opened. Uncover.  dd oregano to the pot along A with the remaining olive oil and half the parsley. Serve in a large dish and scatter with remaining parsley.  pread the grilled bread with the S young garlic paste and serve with the mussels to mop up the sauce. Serves 4 – 6 people.

Serve with: American Pale Ale
