Roasted Guacamole Makes 1 ½ cups

Ingredients         

1 fresh Serrano pepper, stem removed, halved and seeds removed ½ sweet onion, coarsely chopped 1 garlic clove, peeled 1 tomatillo, husked and halved 1 avocado, peeled and cut into chunks 1 Tbsp. fresh lime juice 1/3 cup fresh cilantro leaves, chopped ½ tsp sea salt ¼ cup water

Directions 1. In a large, oil free frying pan over medium heat, pan-roast the Serrano pepper, onion, garlic and tomatillo on all sides for approximately 20-25 minutes. 2. Add all ingredients in a blender or food processer, whirl until blended and chunky.

Tips  Best enjoyed when chilled before serving.  Serve with your favorite veggies such as carrots, cucumbers, green onions, raw asparagus, zucchini, etc. or your favorite stone ground corn tortilla chips.  Also great addition to any salad, eggs, tacos, etc.
