2 cups shredded rotisserie chicken about 1 cup Salsa Verde sauce 2 cups shredded Monterrey Jack or Jalapeno Jack cheese 2 avocados, seeded and sliced Fresh cilantro, chopped (optional) 4 burrito size flour tortillas Fresh fruit, as side dish

D ire cti ons 1. Preheat oven to 350 F. Lightly grease a 7×11 or 9×13-inch baking dish with non-stick cooking spray. 2. In a large mixing bowl, toss together the shredded chicken, salsa verde sauce, shredded cheese and cilantro (if using.) 3. Spoon evenly onto all 4 of the tortillas. Add avocado slices to each and roll them up. Place them seam side down in the prepared baking dish. 4. Bake in the preheated oven for 15-20 minutes, or until cheese has melted and tortillas begin to golden. 5. Prepare fresh fruit. 6. Serve Salsa Verde Chicken Burritos with a side of fresh fruit.

3 white onions, sliced 2 Tbsp olive oil 1 Tbsp sugar 1 1/2 lbs. ground beef 1/2 cup bread crumbs 1/3 cup BBQ sauce + drizzles 1 egg 1 tsp garlic powder Salt and pepper, to taste 4-6 dinner rolls, optional side Fresh veggies, as side dish

D ire cti ons 1. Add the sliced onions, olive oil and sugar to a skillet and saute over high heat for about 3-4 minutes. Reduce heat to medium low and let the onions continue cooking and caramelizing, stirring often, for about 30 minutes. Once caramelized, chop half of the onions to use in the meatloaf.* 2. Preheat oven to 350 F. 3. In a large mixing bowl, combine the ground beef, bread crumbs, egg, BBQ sauce, garlic powder, half of the caramelized onions, salt and pepper. Form into a loaf and add to a 9×5 loaf pan, drizzle a little BBQ sauce on top and then cover with foil. Bake for 30 minutes. Remove foil and bake for another 30 minutes, or until the meat has cooked through. 4. Prepare the dinner rolls and fresh veggies. 5. Serve Caramelized Onion and Barbecue Meatloaf topped with remaining caramelized onions with a side of veggies and optional garlic toast.

1 lb. bag Hambeens 15 Bean Soup mix 2 cups rotisserie or cooked and shredded chicken 2 celery stalks, chopped 1 cup onion, chopped 15 oz. can diced tomatoes, undrained 1 cup Frank’s red hot sauce (more if you want spicier) 1 to 2 cups chicken stock Blue cheese crumbles, as garnish for each bowl

D ire cti ons 1. In a large stockpot or saucepan, cook the 15 Bean Soup mix as directed, about 1 hour. Drain and return the beans to the pot. 2. Stir in the chicken, chopped celery, chopped onion, diced tomatoes with juices, Frank’s red hot sauce and chicken stock (just add 1 cup for chunkier/ chili-like meal or 2 cups for more soup like meal). Let simmer for 15-20 minutes to allow flavors to mingle. 3. Serve 15 Bean Buffalo Chicken Chili with blue cheese crumbles in each bowl.

N OT E S Slow Cooker Directions: Rinse beans. Add uncooked beans, chicken, celery, onion, diced tomatoes, hot sauce, and 8 cups chicken stock to slow cooker. Cook on high for 5-6 hours (low for 8-9).

16 oz. ziti (or other medium sized) pasta 15 oz. can pumpkin puree 15 oz. can diced tomatoes, undrained 3 green onions, thinly sliced 3 – 4 cloves garlic, minced 1 Tbsp oregano 2 tsp thyme 2 tsp basil 1 tsp sage 1/2 tsp rosemary Salt and pepper, to taste 1 cup shredded mozzarella cheese Fresh veggies, as side dish

D ire cti ons 1. Preheat the oven to 375 F. Lightly spray a 9×13-inch baking dish with nonstick cooking spray. 2. Cook pasta according to package directions. Drain well. 3. In a large bowl, combine pumpkin, diced tomatoes, onions, garlic, and spices. Sprinkle in a little salt and pepper. 4. Add the drained pasta to the pasta sauce. 5. Place the pasta with sauce into the prepared casserole dish. Sprinkle the cheese over the top of the pasta. 6. Bake in the preheated oven for 20 minutes. 7. Prepare fresh veggies. 8. Serve Pumpkin Pasta Casserole with a side of veggies.

2 Tbsp butter 1 small white onion, chopped 2 stalks celery, chopped 2 garlic cloves, crushed 4 carrot sticks, peeled and chopped 1/2 lb. green beans, trimmed and cut into 1” pieces 15 oz. can tomato sauce 15 oz. can red kidney beans, drained and rinsed 6 cups chicken or vegetable stock 1 1/2 cups elbow pasta noodles Salt and pepper, to taste Parmesan cheese & fresh basil, optional garnishes

D ire cti ons 1. In a large saucepan, melt the butter and saute the onion, celery, garlic and carrots for 4 to 5 minutes. Stir in the green beans, tomato sauce, kidney beans and stock. Bring to bubbling. 2. Once bubbling, stir in the pasta noodles and cook for 8 to 10 minutes, or until al dente. Seaon with salt and pepper to taste. 3. Remove soup from the heat and prepare to spoon into serving bowls. (You don’t want the pasta to overcook!) 4. Serve Minestrone Soup with optional Parmesan cheese and chopped fresh basil.

➏ Slow Cooker Pulled Pork Sandwiches 4 Servings active Time Cook Time

About 1 lb. pork tenderloin or pork roast About 1 1/2 cups BBQ sauce 1 Tbsp brown sugar, optional 1/2 red onion, sliced 4 hamburger buns or hoagie rolls Fresh veggies, as side dish

D ire cti ons 1. Place the roast, fat side up, in a slow cooker. Pour the BBQ sauce over the top and whisk in some water if you prefer. (And brown sugar if you need it.) 2. Set on low and cook for 8 hours. Once cooked, use two forks to pull the pork apart. 3. Prepare fresh veggies. 4. Serve the pulled pork on buns or rolls with red onion slices. Add a little extra BBQ sauce if you need it. 5. Serve Pulled Pork Sandwiches with a side of fresh veggies.

1 medium white onion, sliced into half moons 1 Tbsp olive oil 1 Tbsp honey 2 small broccoli heads (or about 10 oz. frozen broccoli) 10 eggs 1/4 cup milk 1 tsp garlic powder 1/2 tsp Italian seasoning Salt and pepper, to taste Fresh fruit, as side dish

D ire cti ons 1. Add the onion slices to skillet with the olive oil and honey. Saute over medium low heat, stirring often for about 30 minutes, or until brown and caramelized. *See note on recipe #2 Meatloaf for time saving tip on the onions. 2. Chop up the fresh broccoli and steam the broccoli for 3-4 minutes. If using frozen broccoli, cook as directed and drain well/pat dry. 3. Preheat the oven to 350 F. Lightly spray a quiche dish or 8×8-inch glass baking dish. 4. In a mixing bowl, whisk together the eggs, coconut milk, garlic powder and Italian seasoning. Add a couple pinchfuls of salt and pepper. 5. Add the caramelized onions and steamed/cooked broccoli to the baking dish and pour the egg mixture over the top. Bake in the preheated oven for 25 to 30 minutes, or until eggs are set in the middle. 6. Prepare fresh fruit. 7. Serve Frittata with Broccoli & Caramelized Onions with a side of fresh fruit.

4 super thin pork chops (or 2 cups leftover shredded/sliced pork roast) 2 Tbsp olive oil Garlic powder Salt and pepper, to taste 12 sweet dinner rolls about 2 Tbsp mustard 6 slices deli ham 4 sandwich stacker pickles, cut into thirds 8 slices Swiss cheese, cut into smaller pieces Fresh fruit, as side dish

D ire cti ons 1. Preheat the oven to 350 F. or turn on the panini press. 2. Saute the pork chops in a skillet with some olive oil, until cooked through, about 3 minutes on each side. Season both sides of the pork chops with garlic, salt and pepper. 3. Meanwhile, begin prepping the sliders. Set out the buns on a baking sheet, if you are going to bake them. Add mustard to the bread, then add the cooked pork, a slice of ham, slices of Swiss cheese and put the tops of the bread on. 4. Heat in the preheated oven for about 10 minutes, or until cheese has melted. 5. Carefully remove from the oven and then ‘flatten’ the sliders with another baking sheet. 6. Prepare fresh fruit. 7. Serve Cubano Sliders with a side of fruit.

24 oz. canned black beans, drained and rinsed, then pureed with water to make 3 cups total) 2 cups sugar 1 tsp vanilla 1/2 cup milk 1 1/2 cups flour 1/2 cup cocoa 1 Tbsp baking powder 1 tsp baking soda 1 tsp salt 1 tsp instant coffee granules, optional 1 cup shredded unsweetened coconut 2 cups semi-sweet chocolate chips

D ire cti ons 1. Preheat oven to 350 F. Grease a 9×13 baking pan with cooking spray. 2. Puree black beans with a little water. I went for a “smoothie” like consistency. 3. Add the sugar to the mixer or mixing bowl and then pour in the pureed black beans. Mix until smooth, adding the vanilla and milk as it mixes. 4. Dump in the flour, cocoa, baking powder, baking soda and salt. Add the coffee now, if you are using. (Coffee really brings out the flavor of chocolate without making the recipe taste like coffee.) Mix to combine. 5. Toss in the coconut and chocolate chips and combine. 6. Pour the brownie batter into the greased pan and bake in the preheated oven for 35-45 minutes, or until toothpick comes out clean in the center. Let cool on a cooling rack before cutting. 7. Serve Black Bean Coconut Brownies.

2 lbs. whole carrots, peeled and sliced into circles 1/4 cup butter or margarine 1/4 cup brown sugar or other sweetener 1 tsp ground ginger 1 1/2 cups water Cinnamon, sprinkles Chopped parsley, garnish

D ire cti ons 1. Place the peeled and sliced carrots into a saucepan with 1 1/2 cups of water. Let the carrots boil in the water for about 6 to 8 minutes, or until slightly softened. 2. While the carrots are cooking, place the butter or margarine and brown sugar into a microwavable bowl. Microwave on high for 15 seconds. Stir together and mix in the ground ginger. 3. Pour the melted butter-brown sugar mixture over the carrots and cook another 3 to 4 minutes in the saucepan, allowing the butter to glaze the carrots. 4. Sprinkle cinnamon over the carrots before serving. Garnish with chopped parsley, if desired. 5. Serve Gingered Carrot Coins.
