ME Recipe: Shrimp and Avocado Salsa Ingredients: •
1 pound small shrimp, cooked, deveined, and coarsely chopped

2 avocados, peeled and diced
•
3 medium tomatoes, diced (2 cups)
•
2/3 cups red onion, finely chopped
•
1/2 cup fresh cilantro, roughly chopped
•
3 Tablespoons fresh lime juice
•
1 jalapeño, seeded and finely chopped
•
A couple dashes of hot sweet chili sauce
•
Coarse salt and black pepper to taste
Directions: In a medium bowl, combine tomatoes, onion, cilantro, lime juice, and jalapeño. Season with salt, pepper, and hot sweet chili sauce. Serve with “chips.” (baked plantains, jicama, or bibb lettuce.
