12g sugar 7g water 2g glucose syrup 22g raspberry TK 12g sugar 7g water 2g glucose syrup 20g lemon juice 4g white wine 12g sugar 7g water 24g maracuja fresh 2g glucose syrup

fresh fruits 5g raspberry fresh 12g limes 12g maracuya fresh deco 7g egg white 1/4 st 7g flour 7g sugar powder 2g oil

Milk rice tarte: Take sugar, mix with water and glucose and cook the syrup 5-7 minutes. Sift raspberry, clean from bones and add into the chilled syrup and freeze. Make the syrup in the same way. But mix it with the sifted fresh maracuya and freeze. Take the chilled egg white, add sifted sugar powder and sifted flour. Mix everything well and bake it on oil.
