South American Chicken (Serves 2-3) Ingredients • •

2 (4-6oz) boneless, skinless organic chicken breasts 2 Tbsp pureed chipotle chile in adobo sauce

3 Tbsp Bragg’s Liquid Amino sauce or low-sodium Tamari soy sauce (gluten free option) 2 Tbsp raw honey ¼ cup fresh lime juice

1. Preheat outdoor grill to medium-high heat or indoor oven to 400 degrees (see oven preparation instructions below). 2. Combine chipotle chile sauce, Bragg’s sauce, honey, and lime juice in a medium sized bowl. Mix ingredients thoroughly. 3. Add chicken to a shallow glass dish. Pour sauce over chicken; spoon mixture atop chicken to coat well. Let stand for approximately 10-15 minutes. 4. Remove chicken from dish and place onto hot grill. Pour reserved sauce into a small saucepan. Bring to boil; reduce heat and cook for 5 minutes. Brush chicken with reserved sauce while cooking. Chicken is done cooking when an internal thermometer registers 165 degrees at the thickest part of the breast. Brian’s Tips • •





Tamari is a wheat free soy sauce. Look for a low-sodium variety. Bragg’s Liquid Aminos is a healthy alternative to high sodium soy sauce. You can find canned chipotle chile in adobo sauce in the ethnic section of most grocery stores (watch the ingredients!). Puree the chiles with sauce in a food processor or blender. I also like to use 6-8 (4oz) boneless, skinless organic chicken thighs in place of the chicken breasts. The chicken thighs have a higher fat content and the meat works better for tacos. Serve chicken with a side of cooked Quinoa and steamed vegetables for a complete meal.





To bake chicken in oven, place chicken on broiler pan covered with parchment paper. Bake at 400 degrees for 15 minutes. Remove from oven and brush chicken on both sides with reserved sauce as in step #4 above. Return to oven and bake for an additional 15-20 minutes until an internal thermometer registers 165 degrees.
