Spiced Cauliflower Bites A tongue twister of a name, but boy are these cauliflower bites delicious! Almost, again I repeat, almost… remininscent of breaded chicken wings!
INGREDIENTS 1 head ½ cup 1 tbsp 1-2 tbsp
cauliflower, cut into florets (about 6 cups) natural nut or seed butter* seasoning blend of your choice** room temperature water, as needed
*Select a nut or seed butter that contains purely 100% nut or seed and no added salt, sugar or additional oils. Switch it up by experimenting with smooth or crunchy; raw or dry-roasted varieties of nut or seed butters for this recipe. Examples of nut or seed butters include: almond, peanut, cashew, sunflower seed and tahini. **Some of my favourite seasoning blends include tandoori, jerk, cajun, herb & garlic and smoky barbecue!

PROCEDURE Step 1 Preheat oven to 400oF and line a large baking tray with parchment paper. Step 2 In a small bowl, whisk together the nut or seed butter and seasoning blend of your choice. If the mixture is too thick, add a tablespoon or two of water and stir until the butter mixture is smooth. Dip each cauliflower floret into the butter mixture and bake for 12-15 mintues or until just tender and golden.
Step 3 Transfer unto a platter and garnish with freshly chopped parsley, chives or cilantro. Serve hot or cold, as a side dish or snack
