2-3 medium Sweet Potatoes, diced 1 cup Hazelnuts, raw and unsalted 4 Tbsp olive oil
1. Set oven to 350 degrees. 2. Wash and dice sweet potatoes and place on cookie sheet. 3. Put hazelnuts in gallon plastic bag and crush with a mallet or can. 4. Drizzle olive oil over sweet potatoes and use your hands to evenly coat the potatoes. 5. Sprinkle hazelnuts on sweet potatoes. 6. Cook for 90 minutes or until sweet potatoes are golden brown. For variety, choose to keep hazelnuts whole. Use two cookie sheets to allow for sweet potatoes to be only one layer thick. Place sweet potatoes in a plastic bag and add olive oil to evenly coat if you do not want to use your hands.
