Pure New Zealand Products – Japanese Grill Style Our Producer / Partner Five star beef Wakanui feedlot and Canterbury Spring Lambs is produced by ANZCO Foods, in New Zealand. Wakanui’s beef and spring lamb are specially raised and produced for its flagship restaurants in Singapore and Tokyo.

Our Ocean Beef The beef served at WAKANUI is produced from Angus cattle, which provide the best quality meat with a good balance of leanness and marbling. Cattle are raised on highly nutritious pasture in a pristine and stress‐free environment, before being brought into Five Star Beef’s feedlot located in the town of Wakanui for finishing. Cattle are put on a grain‐feeding programmed, completely free of GMO, hormones and antibiotics, to achieve the optimum level of marbling, which gives tenderness and juiciness as well as a mouth‐watering beef flavor.

Our Canterbury Lamb The region of Canterbury producing the lamb that is served at WAKANUI has been a world-renowned lamb producing area for over a century. ANZCO Foods developed WAKANUI Spring Lamb in order to serve the best quality lamb throughout the year. Aging the lamb for four weeks once it is produced when the lamb is around six months old is the secret behind the uniqueness of WAKANUI lamb.

Our Seafood From the deep waters in Akaroa Harbour, Auckland and Coromandel, New Zealand seafood and crustaceans are fresh wild‐caught from sustainable sources, retaining their superior taste, texture and consistency, and certified as “Friends of the Sea”.

Our Dry Aging WAKANUI adopted the dry ageing process for our Beef. Our on‐site Dry‐aging facility was specifically designed to ensure the concentration and saturation of the natural flavor, as well as the natural tenderization of the meat texture.

Our Grill Binchotan is a traditional Japanese charcoal made from oak, dating back to the Edo Period (1603 to 1867). The far-infrared rays produced as the charcoal burns results in the slow penetration of heat into the meat, while the smoke generated from the meat juice on the burning charcoal gives a clean and appetizing smoky flavour to the meat.

Our Salt Christmas Island is one of the largest shimmering salt paddies, with 52% of the island's mass, making Christmas Island the world’s most beautiful sea salt lozenge. Natural Sea crystal salt accentuates the taste when seasoning Wakanui’s ingredients.
