Two Good Farms CSA June 28, 2016 Welcome to the fourth week of the Two Good Farms CSA! With the summer solstice recently passing, we’ve moved into summer crops. Our scallions have started to bulb out, the summer squash is in almost unmanageable swing, and our last flush of strawberries is coming through strong. Finally, our infamous three-pound kohlrabi is making an appearance in this week’s CSA box, a great addition to a Fourth of July coleslaw. After the summer solstice, scallions that stay in the field start to bulb out. With the uptick in heat and the time that they have spent in the ground, scallions start to acquire a more onion-like shape. For those who noticed the change in labels from ‘scallions’ to ‘fresh onions,’ this is the ghost behind the curtain that explains it. The once-scallions-now-onions are delicious grilled, and are getting large enough to be used as you would use onions in any other recipe. On the subject of summer volume upticks, our summer squash and zucchini have hit their stride. While last week’s summer squash and zucchini may have been a touch smaller than we would have preferred, this week’s are massive. The size and scale of these veggies got to be so huge that we had to use a tractor’s land mover to get the crates out of the field and into our refrigerator truck. If ever was the time to make zucchini bread, this is it. The summer squash is a welcome addition to any salad, and is fantastic when sliced and grilled. At the very least, some of the zucchini can serve as conversation starters with their size alone! This is our first inclusion of cabbage into the CSA boxes, and here are one or two recipes to use them with. The first is a straightforward recipe for saurkraut, and the second is a guide to making some fantastically savory Shanghai noodles.
