Hydroponics is a method of growing food without soil. According to the University of Kentucky hydroponic production requires greenhouses to provide the proper conditions for growing such as heat in the winter months and shade and cooling in the summer. Hydroponics is unable to use surface water due to risk of diseases that may be found. Well or county water is almost always used. Hydroponic lettuce is generally harvested with the roots as this provides a longer shelf life. Plants can stay fresh for up to two to four weeks under proper storage conditions.
