Roast Pork with Cherry Tomatoes

Serves 6 1½ kg leg of pork, skin on 1 cup (250ml) sherry ¼ cup (60g) maple syrup 400g cherry tomatoes Preheat the oven to 220°C. Place the pork in a roasting pan and score the skin. Pour the sherry and maple syrup over the pork and season the scored skin generously with salt flakes. Roast for 20 minutes, then reduce the heat to 160°C and roast for 1 hour. In the last 20 minutes of roasting, add the tomatoes. Slice the pork and serve with the tomatoes and pan juices.

Optional: Delicious served with creamy mashed potatoes.

Ooey-Gooey Chocolate Puddings The name says it all!

Serves 4 100g dark chocolate 115g butter 2 eggs 1 cup (175g) chocolate cake mix (see Note) Preheat the oven to 180°C. Melt the dark chocolate and 110g of the butter in the microwave or in a saucepan over low heat. Stir in the cake mix and eggs and mix well. Grease 4 cup-size ramekins well with the remaining butter. Dividing evenly, pour the chocolate mixture into the ramekins. Bake until the tops of the puddings are set, 12 to 14 minutes. Served in the ramekins or turn out onto individual dessert bowls.   Optional: Serve with double cream or vanilla ice cream. Note: Store the rest of the cake mix in an airtight container or resealable plastic bag, ready for the next batch of puddings!!
