Vintage: 2016 Grape Varietal: Shiraz Tempranillo Vineyard Region: New South Wales Vintage Conditions: The spring of 2015 was mostly dry and slightly cooler than average flowing into the summer of 2016 was warm but not hot and allowed for even ripening across all varieties. This even ripening allowed for optimum ripeness and flavour level. Both Shiraz and Tempranillo varieties from 2016 benefited most from this even ripening and display great varietal expression Colour: Vibrant rouge with red hues. Aroma: Aromas of plum, and peppery red currants and cherry fruit dominate the nose with hints of black pepper, spice and sweet toasty oak with hints of vanilla notes add complexity. Palate: Palate is soft but full bodied, flavours of mulberry and spicy red currants and cherry are supported by a strong tannin backbone and toasty oak provides excellent length to the palate, balancing the wine out perfectly. Vinification and Maturation: Shiraz was harvested in early March and was fermented for 5-6 days, while the Tempranillo was harvested late March and was fermented in open fermenters. Both varieties were plunged three times daily to extract colour and flavour from the skins. They were pressed off and racked into premium American oak to add richness and complexity during maturation for 9 months. Selected parcels of Shiraz and Tempranillo were blend together to form this wine allowing for balance and length before bottling. Alcohol: 13.5 %
