Do you have a secret food vice? I love sweet things. I spend the whole day eating healthily, then I’ll eat a cake. Finally, what’s your favourite tipple? I love a spiced rum and ginger beer.

RECIPEOFTHEWEEK SERVES 4
Ingredients 1 tbsp Lucy Bee coconut oil Thumb-sized piece of fresh ginger, peeled and grated
2 lemongrass stalks, thinly sliced
1 red chilli, deseeded and chopped 6 kaffir lime leaves
400ml coconut milk
2 tsp sugar (coconut palm or any natural alternative)
4 boneless, skinless chicken thighs
1 tbsp lime juice Handful of coriander leaves, roughly chopped, to serve
Method n Melt the coconut oil in a frying pan, then add the ginger, lemongrass and chilli and gently sauté. n Stir in the lime leaves, coconut milk and sugar, then bring to a gentle simmer and cook, uncovered, at a relaxed bubble for around 5 minutes. n Add the chicken, then cover and simmer for about
25 minutes, until tender and cooked. n Stir in the lime juice and scatter the coriander over before serving with brown rice and steamed broccoli.

Are you a good cook? I’m all right. I always impress my dates with my cooking, but I make the same thing each time – salmon with sweet potato and salad. Well, if it works! You get up superearly to present KISS FM Breakfast, so does that mean you’re too tired to cook for yourself in the evenings? I do try to make the effort. Last night, I had a Marks & Spencer ready meal, but the day before I cooked chicken with brown rice and steamed broccoli.
