Concession Stand Duties OPENING DUTIES 1. There is a HEATER switch in the concessions stand. If it is cold, feel free to turn the heater on! It is on the south back wall on the east hand side, closer to the sink. Just be sure to turn it off before you leave! 2. Turn on popcorn kettle – the temperature has to be a certain degree before you can pop popcorn! 3. Plug in/turn on pretzel machine. Set temperature to 150º; pour water into reservoir inside machine to keep pretzels moist. Place frozen or cold pretzels in the warmer. It takes 20 minutes for cold ones to warm. Start with 12 pretzels. 4. Plug in/turn on the hotdog warmer. Place foil on drip tray area to help with clean up! Turn the warmer to level 3. 5. Plug in/turn on the warming machine to level 3. This is where you’ll place warmed, wrapped hotdogs. 6. Get cheese for nachos out of cooler and microwave for 2 minutes to warm it up. Place bag of cheese into the nacho machine and turn machine on. 7. Take frozen hotdogs and pretzels out of the freezer. The freezer in the “garage” area behind the ticket booth. There are two freezers in the back room. BE SURE TO TIGHTLY CLOSE ALL FREEZER DOORS. 8. Begin coffee and/or hot chocolate, if needed due to temperature. 9. Cook hotdogs a. Locate hotdog buns (may also be in the garage) & foil wrappers b. Place hotdogs on the turners c. After hotdogs are cooked, place in a bun and then in a foil wrapper d. Place hotdogs in warmer e. Turn hot dog machine off 10. Start popcorn – see directions in the binder OR on the wall. a. Be sure you add oil, popcorn and flavoring salt b. While popcorn is popping, assemble boxes 11. Count money in the concessions money bag to ensure it is accurate before opening for business. Add beginning amounts on the recording sheet. Place money in the cash box. 12. PIZZA is separate from Miller Backer Concessions. We purchase the pizza at the club so we get ALL money collected for pizza purchases. PIZZA will be delivered to the concession stand. You will need to pay for the pizza with the money that’s in the pizza bag. 13. Put out candy, chips, napkins and condiments onto front counter; sometimes we put condiments and napkins on a separate table outside the concession stand when it is available. 14. Open for business
Pizza Directions . . . . 1. Count the number of pizza slices you have BEFORE you open. Record it on the PIZZA money sheet. 2. At the end of the night, count how many pizza slices you have left in the boxes. 3. REMOVE the appropriate amount of money ($3 per slice sold) from the concessions money and place in the PIZZA bag. 4. Complete the pizza paperwork.
During your down time . . . 5. Restock soda and water. Extra drinks are stored in the “garage” area adjacent to the ticket booth. 6. Restock candy in bins, if necessary. 7. Wipe down hot dog rollers; clean drip tray area 8. List any item needing to be replenished because it isn’t in the concession stand OR the “garage” area and give it to Board Member on Duty.
Turn off and unplug ALL equipment, except coolers Clean popcorn kettle and area surrounding it Remove nacho cheese from machine and place back in cooler Clean coffee/hot chocolate machine Wash any utensils or dishes Place candy and chips under counter areas. Place condiments and items that could melt in cooler. Wipe down counters Count money in the concessions money and record ending amounts on the recording sheet. Give the money to the Board Member on duty. Check that no personal items have been left in concession area. If there are items, try to locate owner. If something is unclaimed and you cannot locate the owner, give item to Board Member on duty. Let the custodian on duty know you are ready for him/her to lock up!
