SHRIMP PASTA PRIMAVERA
ADAPTED FROM DELISH Prep time: 35 minutes
ADAPTED FROM TASTE OF HOME Prep Time: 15 minutes, Serves 2
Prep Time: 7-10 minutes, Serves 4
Ingredients 1 container ricotta 4 oz mozzarella 1/3 tsp. freshly grated/ground nutmeg 1/4 cup grated Parmesan 2 tbsp grated Parmesan Kosher salt and pepper 1 bunch spinach, stems discarded 1 package frozen winter squash purée 6 no-boil lasagna noodles Green salad, for serving Directions 1. Heat oven to 425°F. 2. In a large bowl, combine the first 4 ingredients with ½ tsp salt and ¼ tsp pepper; fold in the spinach. 3. Spread 1/2 cup of the squash on the bottom of an 8-in. square baking dish. 4. Top with 2 noodles and spread a third of the remaining squash over the top. 5. Dollop with a third of the ricotta mixture; repeat. 6. Sprinkle with the remaining parmesan, cover tightly with an oiled piece of foil and bake for 15 minutes. 7. Uncover and bake until the noodles are tender and the top is golden brown, about 8 to 10 minutes.

WINTER SQUASH LASAGNA
Ingredients ½ lb asparagus, washed, trimmed about 2 inches off bottom. Cooked 2-3 minutes in ½ inch boiling water of a skillet. Drain & return to dress it up. - OR 1lb green beans, washed. Blanch by boiling green beans for 2 minutes, drain and quickly transfer beans to a bowl of ice water to cool. This will help the beans keep their bright green color
Directions (a.k.a Dress Up) Pick One 1. Pesto Sauce (+ toasted pine nuts). 2. Coat with toasted almonds + 1 tbsp melted butter. Leave a bit of almonds to garnish top. 3. Drizzle with extra virgin olive oil & balsamic glaze. 4. Coat while greens are hot with 1 tbsp butter/olive oil, then add 1 tbsp lemon juice, 1 tsp. lemon zest, dash of salt.
Ingredients 4 ounces uncooked angel hair pasta 8 jumbo shrimp, peeled and deveined 6 fresh asparagus spears, trimmed and cut into 2-inch pieces 1/4 cup olive oil 2 garlic cloves, minced 1/2 cup sliced fresh mushrooms 1/2 cup chicken broth 1 plum tomato, peeled, seeded, diced 1/4 tsp salt 1/8 tsp crushed red pepper flakes 1 tbsp each minced fresh basil, oregano, thyme and parsley 1/4 cup grated Parmesan cheese Directions 1. Cook pasta according to package directions. Meanwhile, in a large skillet, sauté shrimp and asparagus in oil for 3-4 minutes or until shrimp turn pink. Add garlic; cook 1 minute longer. Add the mushrooms, broth, tomato, salt and pepper flakes; simmer, uncovered, for 2 minutes. 2. Drain pasta. Add the pasta and seasoning to skillet; toss to coat. Sprinkle with cheese.
