Quick Spaghetti Serves 4 Ingredients 1 pound lean ground beef 1/2 onion, finely chopped 2 cloves garlic, minced 2 (16 ounce) can diced tomatoes 1 can tomato paste 1 (28 ounce) can tomato sauce 4 tablespoons prepared pesto 1 pound spaghetti Directions Cook beef over medium-high heat until browned. Add onion and garlic, cook and stir until vegetables are tender. Stir in diced tomatoes, tomato sauce and pesto. Simmer spaghetti sauce with splatter screen while pasta cooks. 2

Garlic Hamburgers Serves 4 Ingredients 1 pound ground beef 4 cloves garlic, minced 1/8 teaspoon cayenne pepper 1 teaspoon salt 1 teaspoon freshly ground black pepper 1 tablespoon butter 1 tablespoon oil
4 buns sliced tomato sliced pickles lettuce cheese sliced onion mayonnaise mustard ketchup
Directions Heat oil and butter to medium-high heat. Mix the beef, garlic, salt and pepper. Divide into four portions and flatten into patties. Cover with splattter screen and cook the patties for 3 to 5 minutes on each side. Use an instant read thermometer to make sure beef is cooked to 160 degrees Fahrenheit. Place on buns and top with favorite condiments and toppings.

Hearty Chili Serves 4 Ingredients 1 lb lean ground beef 1 medium onion, chopped 2 cloves garlic, finely chopped 1/4 cup tomato paste 1 tablespoon diced canned jalapeño 2 (16 ounce) cans diced tomatoes
1 can (15 oz) kidney beans, drained 1 cup frozen corn, thawed 3 tablespoon chili powder 1 cup beef broth 1/2 teaspoon salt 1/4 teaspoon pepper
Directions Cook beef over medium-high heat until browned. Add onion and garlic and cook about 3 minutes, stirring constantly. Stir in tomato paste, beans, corn, chili powder, broth, salt and pepper. Reduce heat to medium. Simmer covered with splatter screen for 10 minutes, stirring occasionally, until vegetables are tender. Garnish with jalapeño chilies and cilantro if desired. 4

Amazing French Fries Serves 4 Ingredients 1/3 cup white sugar 1 cup warm water 2 cups ice 2 large russet potatoes oil for frying salt Directions Dissolve the sugar in warm water, then add ice. Peel and sliced potatoes into 1/4 inch strips then soak in cold sugar water for 15 minutes. Dry thoroughly. Heat oil on high to 375 degrees Fahrenheit. Add potatoes in batches and cook until golden brown. Remove to paper towels. Salt to taste.

Batter Fried Fish Serves 4 Ingredients 1/3 cup flour 1 teaspoon salt 2 eggs 1/2 cup beer 1 1/2 cups panko bread crumbs 1 1/2 lb white fish fillets oil for frying
Tarter Sauce 1/2 cup mayonnaise 1/4 cup dill pickle relish 1 tablespoon lemon juice salt and pepper to taste
Directions Mix flour and salt in a bowl. In another bowl, whisk the eggs and beer. Place bread crumbs in a gallon plastic bag. Heat about 2 inches of oil on medium-high. One piece at a time, coat fish with flour, then dip in beer mixture, then shake in bread crumbs. Fry in batches about 4 minutes, turning once, until golden brown.

Coleslaw Serves 4 Ingredients 1/2 cup plain nonfat Greek yogurt 1/2 cup mayonnaise 3 tablespoons vinegar 2 tablespoons honey salt and pepper to taste 1 head cabbage, finely chopped 2 carrot, shredded Directions Mix dressing together and season with salt and pepper. Add vegetables and stir to coat.
Fried Chicken Serves 4 Ingredients 1 whole chicken, cut into pieces 1 cup all-purpose flour 1 teaspoon salt 1/2 teaspoon ground black pepper 1 teaspoon paprika oil for frying Directions Sprinkle chicken with salt, pepper, and paprika. Roll seasoned chicken in flour to coat. Heat a 1/2 inch of oil in a large, heavy skillet on medium. Place chicken pieces in hot oil. Cover with splatter screen, and fry until golden-brown, turning once, 15 to 20 minutes. Use an instant read thermometer to make sure chicken is cooked to 165 degrees Fahrenheit. thebellemain.com

Beef Stew Serves 6 Ingredients 1-1/2 pounds boneless chuck roast, cut into 1-inch pieces 2 tablespoons vegetable oil 1 teaspoon salt 1/2 tablespoon freshly ground pepper 1 yellow onions, cut into 1-inch chunks 2 tablespoons flour 2 cloves garlic, minced 2 cups beef broth 1/2 teaspoon dried rosemary 1 bay leaf 1/4 teaspoon dried thyme 2 large carrots, peeled, cut into 1-inch slices 2 russet potatoes, peeled and cut in 1-inch chunks Directions On medium-high, heat the oil in a large heavy pot. When hot add the beef, salt and pepper. Cover with splatter screen and brown very well. When browned, remove the beef and set aside. Add the onions and cook for about 5 minutes, until soft. Reduce heat to medium-low, and add the flour and cook for 2 minutes stirring often. Add the garlic and cook for 1 minute. Add 1/2 cup beef broth and scrape up the brown bits. Then add the rest of the broth, bay leaf, thyme, rosemary and the beef. Cover and simmer on low for about 1 hour. Add potatoes and carrots, and cook covered for another 30 minutes or until the meat and vegetables are tender.

Side Salad with Lemon Vinaigrette Serves 4 Ingredients 2 tomatoes 1 head green lettuce 1/2 sweet onion 1/2 cucumber
Vinaigrette 1/2 teaspoon grated lemon zest 3 tablespoons freshly lemon juice 1 teaspoon sugar 1/2 teaspoon Dijon mustard 5 tablespoons virgin olive oil
Directions Tear lettuce into bite size pieces, slice tomato into chunks, thinly slice onion and cut cucumber into 1/2 inch pieces. Whisk all vinaigrette ingredients, season with salt and fresh ground pepper to taste. Toss with vegetables just before serving. thebellemain.com

Chicken Stir-Fry Serves 4 Ingredients 3 chicken breasts, thinly sliced 2 cups broccoli 1 cup sliced carrots 1 onion, cut into large chunks 1 can sliced water chestnuts, drained 2 tablespoons sesame oil
Sauce 2/3 cup soy sauce 1/2 cup chicken stock 1/4 cup brown sugar 1 tablespoon minced fresh ginger 2 cloves garlic, finely chopped 1/4 teaspoon red pepper flakes 1-1/2 tablespoons cornstarch
Directions Combine all sauce ingredients, coat chicken and refrigerate for at least 15 minutes. In a large skillet or wok, heat 1 tablespoon sesame oil to medium-high heat. Cook broccoli, carrots, and onion until tender-crisp, about 4 minutes. Remove and keep warm. Add another tablespoon sesame oil and add chicken, reserving the marinade. Cook and stir chicken about 3 minutes. Then add the vegetables, water chestnuts and reserved marinade. Continue cooking and stirring until chicken is done and vegetables are tender, 5 to 6 minutes. Serve over hot rice.

Ground Beef Stroganoff Serves 4 Ingredients 1/2 lb lean ground beef 3/4 lb fresh sliced mushrooms 1 can condensed cream of mushroom soup
1/2 cup sour cream or non-fat plain yogurt 1/2 cup milk salt & pepper to taste
Directions Over medium heat, brown ground beef. Add mushrooms and cook 2-3 minutes. Stir in soup and sour cream or yogurt and add milk. Bring to a boil, then reduce heat and simmer on low for 10 minutes. Season with salt and lots of pepper. Serve over egg noodles.

Strawberry Shortcake Serves 4 Ingredients 1 pound fresh strawberries 1/3 cup white sugar 2 cups flour 3 teaspoons baking powder 2 tablespoons sugar 1/4 teaspoon salt 1/3 cup butter 1 egg 2/3 cup milk whipped cream Directions Slice the strawberries and toss them with sugar. Set aside. Preheat oven to 425 degrees Fahrenheit. In a mixer, combine flour, baking powder, sugar and salt. Then cut in the butter on high speed until the mixture appears crumbly. Add beaten egg and milk. Mix until just combined, don't over-stir. Drop batter on cookie sheet to make 4 biscuits. Bake for 12 to 15 minutes. Once cooled, top shortcakes with strawberries and whipped cream. thebellemain.com
