TASTING NOTES COLOUR
Vibrant purple red.
NOSE
Liquorice, violets and blueberries lead on the nose along with fine cedar oak.
PALATE
The palate displays ripe tannins, hints of mocha oak and dark fruits leading into a powerful finish.
WINEMAKER NOTE The fruit for this single vineyard Shiraz comes from a vineyard off Old Beenak Road in Yellingbo. Hand harvested, it is destemmed into small open top fermenters and after a short 3 day cold soak they are inoculated with wet cultured Syrah yeast. Fermentation temperature ranges from 25-30o C with hand plunging twice a day for cap management, with a single rack and return at the peak of fermentation. When the cap has sunk post primary ferment, the wine is pressed to French oak barrels (approx. 20% new) for malolactic fermentation and maturation on gross less. The wine spends 15 months in barrel before selected barrels are then blended into tank and receive a polishing filtration to finish. CELLAR
