Bone Broth Stir Fry Serves 4-6

Ingredients          

2-3 cups of Bone Broth Stew (See recipe for Bone Broth Stew) 2 portobello mushrooms 1 organic red bell pepper, chopped 1 cup organic broccoli, finely chopped 1 organic zucchini, chopped 2 cups organic kale, finely chopped 2 medium organic carrots, shredded 1 cup organic black beans 2 cups cooked brown rice or quinoa 2 Tbsp. coconut oil

Directions 1. In a medium - large sized pan, sauté broccoli, zucchini, red bell pepper and carrots in 2 Tbsp. coconut oil for approximately 5 minutes. 2. Add Portobello mushrooms, kale, black beans and cooked brown rice and sauté for 3 more minutes. 3. Add bone broth stew and reduce heat to low. Allow to heat up for five minutes. 4. Enjoy!

Tips  This recipe provides another meal option when making Bone Broth Stew.  If you do not have Bone Broth Stew prepared, you can substitute organic chicken stock/broth. To make this a vegetarian meal, add organic vegetable stock.  Cook ground organic, grass fed beef and add to this dish the next day for another dinner option!
