Here’s how to peel, slice and dice a fresh zucchini. Use as an appetizer or snack, in salads, as an ingredient in another dish, and as a cooked vegetable. No need to wash if removing peel. ______1.

Get fresh zucchini. Get peeler. Get cutting board. Get knife. Get a fresh clean (if not removing peel) zucchini, a clean peeler, a clean cutting board and a clean, sharp knife.

Decision. Do not peel. If not peeling the zucchini (and many chefs make this choice), go to step 3.

______2A. Decision. Peel. If peeling the zucchini, use the peeler to remove the peel from the zucchini. Throw away the peel. ______3.

Cut ends. Put the zucchini on to the cutting board and, using the knife, cut off both ends of the zucchini. Throw away the end pieces.

Cut larger pieces. To cut larger pieces, use the knife to cut the zucchini into two or three fairly equal sized pieces. Use the knife to cut each of these pieces lengthwise so they will not be so thick. Continue cutting lengthwise until you are satisfied with the thickness of your zucchini slices.

Cut bite sized. To cut smaller, bite sized pieces, use the knife to continue cutting the zucchini from step 4. . Or, cut the whole zucchini from step 3 into round one half inch thick pieces.
