Ingredients • 1 whole chicken (about 3.5 lbs) • Salt, for seasoning • White or black pepper, for seasoning • ½ cup diced onion • 3 cloves garlic, peeled and pressed • 1 lemon, juiced • 4 tsp cornstarch
Making it 1. Season the chicken generously with salt and pepper. 2. Place in a slow cooker. Scatter the onion, garlic, and lemon juice over the chicken. 3. Cover the slow cooker and set the temperature to high. Cook for 6 hours, undisturbed. 4. Remove the chicken from the slow cooker and poor accumulated juice into a 2-cup heatproof container. Skim the fat from the top and transfer to a small saucepan. 5. In a separate bowl, whisk the cornstarch with 2 tsp water then whisk into the juices. 6. Cook until thickened, and continue to cook 4 to 5 minutes. Serve over carved chicken.
TIPS & HINTS Carve the whole chicken and save portions for a later meal! Paprika, chili powder, garlic powder and oregano can be combined and used as a rub to add extra flavour.
